Atelier Miam is special to my heart. It’s my escape into India’s abundance and generosity. This is my latest creation inspired by the local syrup in West Bengal.

I recently spent time in villages around Bankura in West Bengal and went to harvest the Taal Gur extract. This is cooked down and used by most people locally in their regular summer desserts. 

You'll find a layer of almond sponge sweetened with Taal syrup, a Taal pulp jam, hazelnut praline encased in a Taal and passion fruit dark chocolate mousse!

I hope you dive into our country’s biodiversity with every bite and make my adventure all the more worthwhile.

Ingredients

Milk, refined sugar, eggs, gelatine, whipped cream, refined wheat flour, butter, cream, cooking oil, mahua flowers, chironji seeds, mahua liquor

Serving Instructions

Refrigerate upon arrival. Leave at room temperature for 1 hour before serving for it to soften.
