Atelier Miam is special to my heart. It’s my escape into India’s abundance and generosity. This is my latest creation inspired by the local flowers in Madhya Pradesh.

I recently spent time in villages around Kanha and went to pick very unique flowers called Mahua. They are dried and used by people locally in dishes and mostly to make alcohol.

You'll find a layer of sponge sweetened with mahua syrup, a craquelin made with chironji seeds and dark chocolate, a layer of white chocolate mahua liquor ganache, a layer of chironji seed praline, salted caramel and greek yoghurt mousse. All this is encased in a crumble made with chironji seeds.

I hope you dive into our country’s biodiversity with every bite and make my adventure all the more worthwhile.

KEY INGREDIENTS

Milk, refined sugar, eggs, gelatine, whipped cream, refined wheat flour, butter, cream, cooking oil, mahua flowers, chironji seeds, mahua liquor.

ALLERGENS

Lactose, Egg, Gluten, Citrus, Soy, Nuts, Chocolate.

Refrigerate upon arrival. Leave at room temperature for 1 hour before serving for it to soften.
