Chef Bani has been working expansively with local harvests and winter red fruits. The cake is delicately built up with a soft chocolate cake, a pomegranate reduction ganache, pink guava compote, raspberry preserve and is then wrapped with a hand-piped vanilla bean mascarpone cream.
