This is Chef Bani’s take on a traditional pineapple cake that brings a sense of nostalgia to the table! It’s has layers of fresh pineapple compote ( she decided to ditch tinned pineapples altogether ), cream cheese and lemon mousse and a light chiffon sponge. This cake will be a delightful substitute for everyone who loves the old school pineapple cakes!
