This is Chef Bani’s take on a traditional pineapple cake that brings a sense of nostalgia to the table! It’s has layers of fresh pineapple compote ( she decided to ditch tinned pineapples altogether ), cream cheese and lemon mousse and a light chiffon sponge. 
This cake will be a delightful substitute for everyone who loves the old school pineapple cakes! 

Disclamer: The marbled glaze falls differently each time. The glaze patterns may not be the same. Overall a glaze pattern of three colours will form ( Red, Rust and White )

Milk, refined sugar, eggs, refined wheat flour, cream, fresh pineapples, lemon zest, cream cheese

GARNISH

Pineapple compote, edible flowers, meringues, microgreens.

ALLERGENS

Lactose, Egg, Gluten, Soy, Chocolate, Pineapple

Refrigerate upon arrival. Leave at room temperature for 1 hour before serving for it to soften.
