Most chefs all over the world start off by interning at professional kitchens. Chef Bani opened an internship program at Miam in 2020. She disliked her days interning at big establishments because all they made her do was chop and break eggs. She wanted to create a nurturing environment for her interns. This menu planning was spearheaded by the interns themselves and then later tweaked & perfected by the chefs to make sure the items are up to Miam standards.
